Creamy chia pudding from The Westbury Hotel
If that dream breakfast can be prepared the night before? Well, that’s even better!
Chia pudding is made in a similar way to Bircher Muesli, or soaked oats, in that most of the work takes place overnight (while you’re sound asleep). Made from chia seeds, which are jam packed full of nutrients, the pudding is a quick, tasty and healthy way to get your day on track.
It’s proved popular on the breakfast menu at The Westbury Hotel, where health conscious guests can also tuck into avocado toast and fresh green juices. Here, head chef Sandeep Singh shares the recipe they use every day.
The Westbury Chia Pudding
Yields 2 servings
Prep time: 5 minutes
Soak time: 1-8 hours
Ingredients
1/2 cup chia seeds
2 cups unsweetened almond milk
1-2 tablespoons organic honey or brown sugar
Your favorite fruits, berries nuts and seeds for topping
Preparation
Combine almond milk and chia seeds. Mix well until the mixture is combined and beginning to thicken. Store covered in the refrigerator overnight, or for at least an hour.
Add honey or brown sugar to taste. Stir well before serving and add a bit of water or almond milk to the pudding if it is too thick. Top with your desired fresh fruits, berries and nuts.
We use goji berries, pumpkin, melon and sesame seeds and a sprig of mint.
