How to Make Bircher Muesli
A recipe from The Croke Park
We all know that it’s the most important meal of the day, but sometimes preparing your own breakfast can be a little uninspiring, let alone time consuming. When Instagram is flooded with pictures of avocado toast, stacks of pancakes and smoothie bowls, your own bowl of porridge can look more than a little unappealing.
But creating your own breakfast of champions couldn’t be easier. The team at The Croke Park know exactly what they’re talking about when it comes to breakfast – each morning they cook up a veritable feast for their guests. But now, with the launch of the new morning menu in The Sideline Bar, there are more people than ever coming in for a morning meal.
One of the dishes on the menu is Bircher Muesli, and we got our hands on the recipe used in The Croke Park’s kitchen so you can give it a go yourself. It just takes a little bit of prep the night before, and come morning you’ll be met with a nutritious, filling and tasty breakfast, ready to kick start your day.
The Croke Park’s Bircher Muesli
-3 red apples, grated
-250g porridge oats
-60g mixed nuts (nibbed almonds, walnuts, peeled hazelnuts)
-125g sultanas
-1 teaspoon cinnamon
-500g natural yoghurt
-435ml water
-60ml apple juice
-Mixed seeds
(serves 6, adjust as necessary)
Combine all dry ingredients well. Add the grated apples and liquid ingredients, mix in a bowl and divide into individual jars/bowls if desired. Leave in the fridge overnight, and it will be ready in the morning. Serve topped with chopped nuts, mixed seeds, sliced banana and berries, and with cherry compote on the side, as you’ll find it in The Croke Park. Or experiment with your own toppings, to create your own bespoke breakfast treat!
If you’d rather leave the cooking to someone else, the new morning menu is available from 8am until 12pm every day in The Sideline Bar. As well as the Bircher Muesli, you can find a creamy porridge with banana and honey or toasted seeds and cinnamon sugar, eggs benedict with bacon and hollandaise sauce, or fluffy buttermilk pancakes with bacon and maple syrup.
