One of The Pembroke's newest additions to its fall cocktail menu, the Chai-quary is an elegant concoction that blends Smith & Cross Rum – known for its unique notes of caramelized bananas, exotic fruits, and a medley of spices – with freshly squeezed lemon and pineapple juice. A touch of chai syrup elevates this cocktail, creating a beautiful balance of fruity sweetness and the soothing warmth of autumnal spices.

Ingredients:

  • 0.5 oz Smith & Cross Rum
  • 1 oz chai syrup
  • 1 oz lemon juice
  • 0.5 oz Avena Amaro
  • 1.5 oz pineapple juice
  • 2 ginger slices for garnish

Instructions:

  • Fill a cocktail shaker with ice, then add Smith & Cross Rum, chai syrup, lemon juice, Avena Amaro, and pineapple juice.
  • Shake vigorously to blend the flavors thoroughly.
  • Strain the mixture into a chilled coupe glass.

Introducing The Dupont Storm – a seasonal twist on the classic Dark 'n' Stormy, recently hailed by WTOP as a top autumnal drink in DC. A favorite at Doyle Bar, this cocktail marries the sweetness of maple syrup with the invigorating spice and warmth of ginger beer. A dash of Guinness – a subtle nod to our Irish heritage – imparts a creamy texture that harmoniously complements the crisp apple notes of the brandy.

Ingredients:

  • 2 oz Crown Apple Brandy
  • 1 oz lime juice
  • 0.5 oz maple syrup
  • Ginger beer (to top)
  • Guinness (to top)
  • Dehydrated lime (for garnish)
  • Mint (for garnish)

Instructions:

  • In a highball glass filled with ice, combine Crown Apple Brandy, lime juice, and maple syrup. Stir to chill and blend the flavors.
  • Top with ginger beer.
  • Gently add a Guinness float to the top.
