Discover Chef Angela Heidenthal’s heartfelt menu at The Pembroke’s next Sunday Supper
At The Pembroke, nestled within The Dupont Circle hotel, Sunday Supper is more than just a meal—it’s a monthly culinary experience celebrating seasonal ingredients, cherished family recipes, and personal stories from the restaurant's talented chefs. For January’s edition, Chef Angela Heidenthal takes center stage, crafting a heartfelt menu inspired by her roots in rural Pennsylvania. Blending comfort and nostalgia with refined techniques, her dishes honor her upbringing while showcasing the skills she’s honed throughout her culinary career.
We sat down with Angela to explore her roots, professional path, and inspiration behind her special Sunday Supper menu.
Can you tell us a bit about your background? What first sparked your interest in cooking?
I grew up in the middle of nowhere in western Pennsylvania, surrounded by farmland. My house sat between two farms, and we’d often pick corn from the neighboring fields. My mom taught me how to make jams and encouraged me to cook family meals, making do with whatever ingredients we had on hand. My love for baking cookies eventually inspired me to attend culinary school, where I discovered a passion for both savory and sweet cooking.
How did your upbringing influence your culinary style?
My cooking is rooted in comfort and heartiness—a necessity when feeding a family of six. We did a lot of hunting, so venison was always on the table, and my dad kept a garden filled with cucumbers, tomatoes, and jalapeños. My mom’s pumpkin cake was a birthday tradition, made from a recipe she kept on an old index card. Those memories drive my style today: taking familiar, comforting dishes and elevating them with modern techniques.
Tell us about your professional journey. How did you build such a well-rounded skill set?
After culinary school, I pursued diverse opportunities to challenge myself—working in pastry, and even teaching cooking lessons alongside renowned chefs. I wanted to learn everything I could about different facets of the industry. My background in both savory and pastry work allows me to be adaptable and creative in the kitchen.
What inspired the menu for this Sunday Supper?
This menu is a heartfelt tribute to my family. I’ve taken recipes that remind me of home and refined them through my professional lens. You’ll see dishes inspired by my dad’s garden, like a cucumber and tomato salad, as well as a no-bake cookie—a treat we often made while camping. And of course, my mom’s pumpkin cake is making an appearance, though with a few modern twists. The meal starts with lighter, summery flavors and moves into rich, hearty dishes, reflecting the changing seasons.
What excites you most about hosting Sunday Supper at The Pembroke?
